Chinna Vengaya Kuzhambu Recipe | Onion Shallots Kuzhambu

Chinna Vengaya Kuzhambu or Onion Shallots Kuzhambu is a traditional south indian dish which is popular as a side for rice. The main ingredient is the roasted onion shallots which has a unique aroma that can never be compromised with big onions. Every bite of small onions will be heavenly, this is a must try if you have onion shallots at home. This recipe is easy to make and its more delicious with the tangy taste of freshly squeezed tamarind.


Shallots have more antioxidants, minerals and vitamins than the onions. Its helps to boost the blood circulation, reduce cholesterol, decrease blood pressure and control diabetes.Fresh shallots can be readily available during spring and early summer season. Wet and humid conditions hamper their flavor and storage life.

PEELED ONION SHALLOTS  – 1 CUP
TAMARIND - GOOSEBERRY SIZE
GREEN CHILLI - 2 NOS
SAMBAR POWDER - 1 TBLSPN
TURMERIC POWDER - 1/4 TSPN
JAGGERY - 1/2 LEMON SIZE
SALT – TO TASTE

TEMPERING

COOKING OIL | GINGELLY OIL – 1 TBLSPN
MUSTARD SEEDS – ½ TSPN
URID DAL - ½ TSPN
FENUGREEK SEEDS - ½ TSPN
CURRY LEAVES – FEW


METHOD OF PREPARATION

1. Take a pan heat oil, add the ingredients under tempering, then add onion shallots, green chilli and saute it until the onion changes color

2. Then add sambar powder saute it for few mins until the raw smell goes and then add tamarind extract

3. Then add turmeric powder, salt, jaggery and allow it to boil in medium flame. Cook it till the raw flavor of tamarind extract is gone. Cook it till raw flavor is gone and the oil starts separating from the sides

4. Serve it with hot rice along with Chow Chow Kootu, Paruppu Usili, Avial
